    La-lasagna Soup

    Hands up all my Saturday Soup Lovers!  Who doesn’t love Lasagna?  So, it stands to reason that Lasagna soup is nothing short of YES!

    This is a brand new recipe I am trying out.  I am currently watching it simmer and about to pour a bowl.  I will let you know by the end if it’s good and you can thank Rylie, she thought it sounded yummy.

    Ingredients

    1 lb of Italian Sausage

    1 large onion, diced

    4 cloves of garlic, minced

    1 10 oz can of diced tomatoes

    1 10 oz can of rotel

    1 10 oz can of tomato sauce

    1 green bell pepper, diced

    1 red bell pepper, diced

    2 cups of sliced white mushrooms

    32 oz of chicken broth

    2 tsp oregeno

    2 tsp basil

    salt and pepper to taste

    6 oz lasagna noodles

    2 cups of fresh spinach chopped

    Directions

    Brown your meat and add in onions and garlic while browning.  Drain off grease.  Place in cooker.  Add all remaining soup ingredients EXCEPT for spinach and pasta.  Cook on medium-high for about 30 minutes (you can also place this in a crock pot on low for 7-8 hours or high for 3-4).  Stir in pasta and spinach and simmer on medium for about 15-20 minutes.

    Garnish It Girl

    Top with fresh mozzarella or Ricotta cheese. Add Some freshly grated Parmesan and garlic bread for the win!  Trust me, its Delish!!!
